Buttered Carrot Souffle This is a simple yet flavorful dish that goes well with a variety of meals. The light and fluffy texture of the souffle is a crowd pleaser, and the subtle sweetness of the carrots balances well with the savory buttery flavor.
Preheat your oven to 375°F. In a medium saucepan over medium heat, melt butter, and add flour. Whisk the mixture until smooth. Cook for about 1 minute until the mixture turns slightly brown. Add 1/2 cup of pureed carrots to the butter and flour mixture and continue stirring until the mixture thickens. Remove the saucepan from heat. Let it cool for a couple of minutes. Add egg yolks to the pureed carrot mixture and whisk until the smooth mixture forms. In a separate bowl, beat egg whites using an electric mixer until stiff peaks form. Fold egg whites into the carrot mixture until just combined. Pour the mixture into a greased souffle dish, and bake for approximately 25 minutes or until golden brown. Serve immediately. Enjoy!
