Homemade Marshmallows In this recipe, we'll be making delicious and fluffy homemade marshmallows from scratch. These marshmallows are perfect for s'mores, hot chocolate, or simply for enjoying on their own.
Grease a square baking dish and lightly dust it with a mixture of powdered sugar and cornstarch. In a mixing bowl, combine 1/2 cup of cold water with 3 packages of unflavored gelatin powder. Set it aside to let the gelatin bloom. In a small saucepan, combine 1/2 cup of water, 1 1/2 cups of granulated sugar, and 1/4 cup of corn syrup. Stir the mixture over medium heat until the sugar dissolves completely. Once the sugar has dissolved, increase the heat to high and let the mixture boil without stirring until it reaches 240°F (115°C) on a candy thermometer. Remove the saucepan from the heat and carefully pour the hot sugar syrup into the bloomed gelatin mixture while continuously whisking on low speed. Gradually increase the speed and continue whisking for around 10-15 minutes, or until the mixture becomes thick and fluffy like marshmallow cream. Add 1 teaspoon of vanilla extract and mix for another minute to incorporate. Pour the marshmallow mixture into the greased and dusted baking dish, using a spatula to smooth the top. Let it sit at room temperature for about 4 hours, or until the marshmallows set. Once set, dust a cutting board with the powdered sugar and cornstarch mixture. Gently remove the marshmallow slab from the baking dish and place it onto the cutting board. Use a sharp knife or cookie cutters to cut the slab into squares or any desired shapes and sizes. Toss each marshmallow square into the remaining powdered sugar and cornstarch mixture to coat all sides.
