Spicy Eggplant and Potato Mash

A hearty side dish that packs a punch. Spice up your dinner with this spicy eggplant and potato mash.

1. Preheat the oven to 200°C.
2. Pierce the eggplant and potatoes with a fork and place them on a baking sheet. Roast for 45 minutes.
3. Once roasted, let the eggplant and potatoes cool down before peeling the eggplant and mashing the potatoes.
4. Add the finely chopped jalapeno peppers and mix it in with the eggplant and potato mash.
