Cheesy Vegetable Omelette This cheesy vegetable omelette is a perfect breakfast option! It is loaded with healthy and flavorful vegetables along with eggs that are rich in protein and cheese that adds a delicious and creamy flavor.
Heat a non-stick pan on medium-high heat, add 1 tablespoon of oil, and sauté the chopped onion for 1-2 minutes till it turns translucent. Add the chopped tomato and sauté for another minute until it softens. Add the chopped potato and cook for 5-7 minutes until it is slightly golden and cooked through. In a separate bowl, whisk the eggs, shredded cheese, and chopped cilantro together. Pour the egg mixture over the cooked vegetables in the pan. When the bottom of the omelette is set, carefully flip the omelette to cook the other side for 1-2 minutes till it is cooked through.
