Heat a large skillet over medium-high heat. Add the cubed chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside. Add the sliced carrots and diced potatoes to the same skillet and cook until slightly softened, about 5 minutes. Add the long grain rice and 2 cups of water to the skillet. Bring everything to a boil, then reduce the heat to low, cover the skillet and let simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. Add the reserved chicken back to the skillet and stir in the chopped cucumber. Cover and let cook for an additional 5-7 minutes, just until the cucumber has slightly softened.
