In a large pot of salted water, boil the diced potatoes until they are tender, about 10 minutes. Drain and set aside. Heat some oil in a pan over high heat. Add the diced chicken and stir-fry for 5-7 minutes or until the chicken is cooked and browned on all sides. Remove from the heat and set aside. In a large bowl, combine the chopped lettuce, diced tomatoes, finely chopped onion, and diced cucumber. Add the boiled potatoes and chicken to the bowl, and toss gently to combine.
