Best of all, it's easy to make – just the thing for when you're in a hurry to get back to your swashbuckling!
Start by cooking the rice and lentils together according to the instructions on the packages. While the rice and lentils are cooking, heat some oil in a large skillet. Add the chopped onion to the skillet and cook for a few minutes until it is soft and fragrant. Add the diced tomatoes to the skillet along with a teaspoon of your favorite spices. I usually use a blend of cumin, coriander, and paprika. Stir well and let the tomato mixture cook for a few minutes until it has thickened slightly. When the rice and lentils are done, add them to the skillet with the tomato mixture. Stir everything together and let it simmer for 5-10 minutes until the flavors have melded together and the stew is hot and bubbly.
