1 medium eggplant, diced
4 eggs

2 tbsp olive oil
Simple Eggplant Omelette
This simple yet delicious recipe makes for a perfect breakfast or brunch, or even a light dinner.
In a large bowl, whisk eggs and season with salt to taste.
Heat olive oil in a non-stick skillet over medium heat.
Add diced eggplant to skillet and cook until tender and lightly browned, about 5-7 minutes.
Pour the whisked eggs over the eggplant, and let it cook until golden brown on one side, then flip and cook the other side until cooked through.
