Ingredients
4 chicken thighs, skinless and boneless
2 large potatoes, peeled and cut into small cubes
1 medium onion, diced
3 ripe tomatoes, chopped
Tomato Chicken Stew
This recipe is a hearty stew that is perfect for a cozy lunch or dinner.
Heat some oil in a large pot over medium-high heat. Add the chicken thighs and cook for about 3-4 minutes on each side until browned. Remove from the pot and set aside.
In the same pot, add the diced onion and cook for 2-3 minutes until soft and translucent. Add the chopped tomatoes and cook for another 2-3 minutes until they start to soften.
Add the potatoes and stir to combine. Return the chicken to the pot, making sure it is nestled down into the vegetable mixture. Pour enough water or chicken broth to almost cover the chicken and bring to a boil.
Reduce the heat to medium-low, cover the pot and simmer for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
Taste and adjust the seasoning with salt and pepper as needed. Serve hot and enjoy!
