Cabbage Fried Rice This recipe is a simple twist on traditional fried rice. Instead of using peas and carrots, we'll use cabbage, which is a great way to add extra nutrients to the dish.
Heat a pan over medium-high heat and add in 1 tablespoon of vegetable oil. Once hot, add in the beaten eggs and scramble them until they're cooked through. Remove the eggs from the pan and set aside. In the same pan, add in the remaining tablespoon of vegetable oil and then the chopped cabbage. Cook for 5 minutes, stirring frequently, until the cabbage is tender. Add in the chopped tomatoes and cook for another 2-3 minutes until they're softened. Add in the cooked rice and the scrambled eggs, stirring until everything is well combined. Season with salt and pepper to taste and continue cooking for another 2-3 minutes until everything is heated through. Serve hot and enjoy!
