Ingredients: 1 can of jackfruit in brine, drained and shredded; 1 red bell pepper, sliced; 1 green bell pepper, sliced; 1 yellow onion, sliced; 2 cloves of garlic, minced; 1 tsp of smoked paprika; Salt and pepper to taste; 2 tbsp of olive oil; 8 small tortillas

Jackfruit and Pepper Fajitas

In this recipe, the sweet and savory flavors of jackfruit are transformed into a delicious Mexican-inspired meal.

Heat 1 tbsp of olive oil in a skillet over medium heat. Add the jackfruit and sprinkle with salt, pepper, and smoked paprika. Give it a quick stir and cook for about 5 minutes until crispy. Remove from the skillet and set aside.
In the same skillet, heat the remaining olive oil over medium heat. Add the bell peppers, onion, and garlic. Sprinkle with salt and pepper and stir well. Cook for about 7-8 minutes until the vegetables are tender and slightly charred.
Return the jackfruit to the skillet and give everything a good stir. Cook for an additional 3-4 minutes until the flavors are combined.
Heat the tortillas in the microwave or over a pan.
Serve the fajitas with the warm tortillas and top with your favorite toppings, such as avocado, salsa, or sour cream. Enjoy!
