Chocolate Lamb Chops with Mixed Rice This recipe is a unique take on a classic lamb chop dish, by incorporating the rich and decadent flavor of chocolate. The mixed rice adds a healthy balance to the dish, making it a complete meal.
Preheat the oven to 375°F. Cook the mixed rice according to package instructions. Season the lamb chops with salt and black pepper. Heat the olive oil in a skillet over high heat, and sear the lamb chops for 3-4 minutes on each side until browned. Transfer the lamb chops to a baking dish and roast in the preheated oven for 10-12 minutes. In a small saucepan, melt the dark chocolate chips over low heat until smooth.
