Cowboy Alheira Rice Skillet This recipe is a hearty and flavorful one-pan dish that will leave you feeling satisfied. The alheira sausage adds a spicy kick to the dish and pairs well with the tender asparagus and fluffy rice.
In a large skillet, cook the alheira sausage over medium heat, breaking it up into small pieces until browned and crisp. Add the chopped onion to the skillet and sauté until translucent, about 5 minutes. Pour in the rice, stirring constantly for 2-3 minutes. Add 2 cups of water to the skillet and bring to a boil. Once boiling, cover the skillet and turn the heat to low. Let the rice cook for about 18-20 minutes until fully cooked and the water has been absorbed. Add in the chopped asparagus to the skillet and stir until heated through. Serve hot, garnished with fresh herbs if desired.
