Creamy Mushroom Pork Tenderloin This dish is perfect for a cozy weeknight dinner. The tender pork is seared to perfection and then combined with sautéed mushrooms and onions, and finished in a creamy sour cream sauce.
Preheat the oven to 375°F. Season the pork tenderloin with salt and pepper. Heat a large skillet over medium-high heat, add a tablespoon of oil, and sear the pork until browned on all sides. Remove the pork from the skillet and transfer to a baking dish. Add the onions and mushrooms to the same skillet and cook until softened. Pour the mixture over the pork tenderloin in the baking dish. Spoon the sour cream over the top of the pork tenderloin and vegetable mixture. Bake in the preheated oven for about 20-25 minutes, or until the pork is cooked through. Remove from the oven and let it rest for a few minutes before slicing and serving. Enjoy!
