Grilled Chicken and Cucumber Sandwich

This sandwich is perfect for lunch or a light dinner. Grilled chicken and fresh cucumber pairs well on a baguette or French bread loaf.

1. Preheat the grill to medium-high heat.
2. Season the chicken breasts with salt, pepper, and olive oil. Grill for 6-8 minutes on each side, or until the internal temperature reaches 165°F.
3. While the chicken is grilling, slice the cucumber into thin rounds.
4. Cut the French bread into sandwich-sized pieces and slice each piece in half.
5. Spread a tablespoon of mayonnaise on one half of each piece of bread.
6. Once grilled, remove chicken from the grill and let it rest for 5 minutes. Slice the chicken breasts into thin slices.
7. Assemble the sandwich by layering cucumber slices and chicken on the bread. Top with the other half of the bread.
