In a large pot, bring chicken broth, rice vinegar, soy sauce, ginger, garlic, and sriracha to boil over medium-high heat. Add sliced shiitake mushrooms and bamboo shoots to the pot and continue to cook for 5 minutes. In a small bowl, whisk together cornstarch and 1/4 cup of cold water until smooth.
