Preheat your oven to 425 degrees Fahrenheit. Pat the chicken dry with paper towels and season generously with salt and pepper inside and out. In a small bowl, mix together the butter, chopped parsley, rosemary, and thyme. Gently slide your fingers between the skin and the meat of the chicken breast and rub half the herb butter on the meat. Place the chicken in a roasting pan or large cast iron skillet and tuck the wings underneath the body. Roast the chicken for 15 minutes, then turn down the oven to 350 degrees Fahrenheit and continue roasting for an additional 1-1 1/2 hours, or until the chicken is cooked through and the juices run clear.
