Lentil Vegetable Soup This hearty soup is perfect for a cold winter night. It's filled with lentils and vegetables and has a delicious chicken broth base. Best of all, it's easy to make!
In a large pot, add 1 cup lentils and 4 cups chicken stock. Bring to a boil and then reduce heat to low and allow to simmer for 15-20 minutes, or until the lentils are tender. Add 1 cup of frozen diced veggies to the pot and continue to simmer for an additional 10 minutes. If you want a smoother texture, you can use an immersion blender to puree the soup. Serve hot with crusty bread on the side. Enjoy!
