Rice and Chicken Bowl with Fried Egg This recipe is a delicious and filling meal that is perfect for lunch or dinner. Tender chicken breast is flavored with common spices and served on a bed of rice, then topped with a crispy fried egg.
Rinse rice in a fine mesh strainer until water runs clear. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and stir well. Cover, reduce heat to low, and simmer for about 20 minutes, or until the water has been absorbed and the rice is tender. Fluff with a fork and set aside. While the rice cooks, heat the olive oil in a large skillet over medium-high heat. Add the diced chicken breast and season with salt, pepper, garlic powder, and onion powder. Cook for about 8 minutes or until fully cooked through, stirring occasionally. Divide the cooked rice evenly between two bowls. Top each bowl with half of the cooked chicken. In the same skillet, crack two eggs and cook until the whites are set but the yolks are still runny, about 3 to 4 minutes. Carefully slide one fried egg over each bowl. Serve immediately and enjoy!
