Tomato Cornmeal Tart This recipe is perfect for a quick and delicious vegetarian meal or side dish. The savory tomato and cornmeal flavors in the tart are balanced by the nuttiness of Parmesan cheese. You won't believe how easy it is to put the tart together!
Preheat oven to 375°F (190°C). In a bowl, mix together 1 cup of cornmeal, 1/2 cup flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Cut 1/2 cup of cold butter into small pieces and add to the bowl. Mix everything together with your hands until the butter is well incorporated and the mixture is crumbly. Press the mixture into a 9-inch tart pan and press the dough up the sides of the pan as well. Bake in the oven for 10 minutes. While the crust bakes, slice 3-4 tomatoes and place them on a paper towel to remove excess moisture. Once the crust is done, sprinkle 1/2 cup Parmesan cheese onto the crust. Place the sliced tomatoes on top of the cheese in a spiral pattern, overlapping slightly. Drizzle the tomato slices with 1 tablespoon of olive oil and sprinkle another 1/2 cup of Parmesan cheese on top of the tomatoes. Bake in the oven for an additional 20-25 minutes or until the cheese has melted, the crust is golden brown, and the tomatoes are slightly roasted. Allow to cool for a few minutes before slicing and serving. Enjoy!
