Basil Pork Sandwich

This delicious sandwich combines tender pork with fresh basil and fragrant bread. It is a perfect meal for lunch or dinner.

1. Rinse the pork tenderloin with cool water, pat dry and season both sides with salt and pepper.
2. Heat a greased skillet or griddle over medium heat. When hot, add the pork and cook for 6-7 minutes until browned on one side.
3. Flip the pork and continue cooking until browned and cooked through, about 5-6 minutes more.
4. Remove the pork from the skillet and place on a plate to cool.
5. Once cooled, cut the pork into thin slices.
6. Spread butter on one side of each slice of bread.
7. Place the pork slices on a slice of bread, and sprinkle with freshly chopped basil.
8. Top with the other slice of bread, buttered side facing out.
9. Warm up a panini press or grill pan over medium-high heat.
10. Place the sandwich on the press or grill pan, and cook for 2-3 minutes, until the bread is toasted and golden brown.
11. Remove the sandwich from the press or pan, slice in half and serve. Enjoy!
