Preheat your oven to 400°F (205°C) and line a baking tray with parchment paper. Wash and scrub the potatoes and pat them dry. Prick the potatoes all over with a fork and place them onto the prepared baking tray. Bake them for 1 hour until tender. While the potatoes are baking, prepare the stuffing. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes. Add the minced beef and cook until browned. Add the spinach leaves and cook for another 2-3 minutes. Season with salt and pepper. Remove from heat and set aside. In another skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and sauté until browned. Season with salt and pepper. Remove from heat and set aside. Once the potatoes are done, remove them from the oven and allow them to cool for a few minutes until they are cool enough to handle. Cut a rectangular shape at the top of each potato and scoop out the flesh with a spoon, leaving about 1/4 inch margin. Place the scooped-out flesh in a bowl and mash it with a fork. Add the beef and spinach mixture to the bowl and mix well. Stuff the mixture back into the potato shells, mounding it slightly. Top the potatoes with sautéed mushrooms and sprinkle with grated Parmesan cheese. Return the stuffed potatoes to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
