Beefy Enchilada Casserole This beefy enchilada casserole is a delicious and comforting meal that's perfect for a weeknight dinner. The combination of ground beef, marinara sauce, salsa, and cheese is packed with flavor and will have your taste buds dancing. Plus, it's easy to make and can be customized to your liking.
Preheat the oven to 375°F (190°C). In a large pan, cook the ground beef over medium heat until browned. Drain the excess grease and set aside. In the same pan, add marinara sauce and salsa to the cooked ground beef. Stir well and let the mixture simmer for 5 minutes. In a separate pan, cook the diced potatoes in olive oil until they are soft and golden brown. Season with salt and pepper to taste. In a mixing bowl, combine cooked rice, cooked pasta, and almond milk. Stir well and set aside. Take a 9x13 inch baking dish and layer it with 2-3 tortillas. Pour half of the ground beef mixture over the tortillas. Add a layer of the cooked rice and pasta mixture over the beef mixture. Next, add a layer of the cooked potatoes over the rice and pasta mixture. Repeat the layers with the remaining tortillas, beef mixture, rice and pasta mixture, and potatoes. Finish by sprinkling shredded cheese and parmesan cheese over the top. Cover the dish with aluminum foil and bake for 30-35 minutes or until the cheese is melted and bubbly. Remove from oven and let it cool for 5 minutes. Cut into slices and serve hot. Enjoy!
