Breakfast Noodle Frittata
This breakfast recipe combines the best elements of a frittata and a stir-fry for an unbeatable start to your day. With hearty potatoes, filling noodles, and fluffy scrambled eggs, this dish is perfect for breakfast, brunch, or any meal.
Begin by boiling a pot of salted water and cooking the noodles according to package instructions. Drain and set aside. Meanwhile, wash and dice the potatoes into small cubes. In a large skillet, heat a tablespoon of oil over medium heat. Add in the potatoes and cook, stirring occasionally, until they are cooked through and starting to turn golden brown, about 10 minutes. Add in the cooked noodles and toss to combine with the potatoes. Whisk the eggs in a separate bowl with a pinch of salt and pepper. Pour the eggs over the potato-noodle mixture, and stir gently to combine. Cook the frittata on medium heat until the eggs are set and the bottom is golden brown, about 5-7 minutes. Using a spatula, flip the frittata over and cook the other side until it is golden brown, another 3-5 minutes. Serve hot, garnished with chopped herbs or grated cheese, if desired.
