Breakfast Noodle Frittata This breakfast recipe combines the best elements of a frittata and a stir-fry for an unbeatable start to your day. With hearty potatoes, filling noodles, and fluffy scrambled eggs, this dish is perfect for breakfast, brunch, or any meal.
Begin by boiling a pot of salted water and cooking the noodles according to package instructions. Drain and set aside. Meanwhile, wash and dice the potatoes into small cubes. In a large skillet, heat a tablespoon of oil over medium heat. Add in the potatoes and cook, stirring occasionally, until they are cooked through and starting to turn golden brown, about 10 minutes.
