Range Rider Omelette

Saddle up, partner! This hearty cowboy breakfast is sure to fill you up before a long day on the range.

1. Heat up a cast iron skillet on medium heat and add a dollop of olive oil.
2. Thinly slice the onions and mushrooms and add them to the skillet. Sauté until they are soft and slightly browned.
3. While the onions and mushrooms are cooking, beat 3 eggs in a bowl and set aside.
4. Once the onions and mushrooms are cooked, remove them from the skillet and set aside.
5. Cut the chicken into small pieces and add it to the same skillet. Cook until it is no longer pink and set aside.
6. Add the beaten eggs to the skillet and let them cook until they set around the edges.
7. Once the eggs have begun to set, add the cooked onions, mushrooms, chicken, and a handful of spinach to one half of the skillet.
8. Using a spatula, fold the other half of the eggs over the top of the vegetables and chicken and press down gently.
9. Cook for another minute or so until the eggs are fully set.
10. Slide the omelette onto a plate and serve hot. Saddle up and enjoy!
