Caramelized Onion Tart

This caramelized onion tart is a perfect appetizer or light lunch. The sweetness of the onions and the tanginess of the goat cheese are a match made in heaven.

1. Preheat the oven to 400°F.
2. Peel and thinly slice the onions.
3. Heat the olive oil in a pan over medium heat. Add the onions and sauté for about 5 minutes or until softened.
4. Stir in the sugar and continue cooking for another 5-7 minutes, stirring occasionally, until the onions are caramelized and golden brown.
5. Season with salt and pepper to taste.
6. Roll out the puff pastry on a baking sheet lined with parchment paper.
7. Spread the caramelized onions over the pastry, leaving a small border around the edges.
8. Sprinkle the crumbled goat cheese and chopped parsley over the onions.
9. Bake for 20-25 minutes or until the pastry is golden brown and puffed up.
