Cheesy Bacon and Egg Breakfast Quesadilla This breakfast quesadilla is a delightful combination of bacon, eggs, cheese, green onion, and chili pepper. It's perfect for a quick and easy breakfast on the go or a lazy weekend brunch.
Cook the bacon until crispy, then chop into small pieces and set aside. In a small bowl, beat the eggs and then scramble them in a skillet with a small amount of butter or oil. Set them aside. Take one tortilla and sprinkle half of the cheddar cheese on top. Then add the scrambled eggs, followed by the chopped bacon, green onion, and chili pepper. Add the remaining cheddar cheese on top. Place the second tortilla on top of the cheese and press down firmly. Heat a large non-stick skillet over medium heat.
