Cheesy Tomato and Basil Chickpea Rice This hearty and flavorful dish combines the nutty taste of chickpeas with sweet diced tomatoes and fresh basil. The cheese is melted in at the end making a gooey and delicious topping that the whole family will love!
Rinse the rice and add it to a pot with 2 cups of water. Bring to a boil and then reduce the heat to a simmer. Cover and cook for 18-20 minutes, or until rice is tender. While the rice is cooking, add the drained and rinsed chickpeas and canned diced tomatoes to a saucepan. Simmer on low heat for 5-7 minutes. Once the rice is cooked, add it to the chickpea and tomato mixture. Stir in the chopped basil leaves. Sprinkle the shredded cheese on top. Cover the saucepan with a lid until the cheese is melted. Serve hot and enjoy!
