Chicken and Asparagus Rice Bowl This chicken and asparagus rice bowl is a delicious and healthy meal that's perfect for lunch or dinner. It's made with tender chicken breast, fresh asparagus, and hearty potatoes, all served over a bed of fluffy rice.
In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low. Cover the saucepan with a lid and simmer for about 18-20 minutes, or until the rice is cooked and the water has been absorbed. While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 5-7 minutes, or until cooked through. Add the chopped asparagus and diced potatoes to the skillet, and sprinkle with salt and black pepper.
