Chicken Biryani Chicken Biryani is a classic Indian dish that is loved by many for its aromatic spices and flavors. This recipe is a one-pot meal that is perfect for a family gathering or a dinner party. The chicken is cooked with biryani masala spices and layered with basmati rice to give it an irresistible aroma and flavor.
Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. Heat the ghee in a large pot over medium heat. Add the cumin seeds, cinnamon sticks, bay leaves, cloves and cardamom pods. Fry for a few seconds until fragrant. Add the sliced onions and fry until they are golden brown. Add the chopped tomatoes and fry for a few minutes until they are soft. Add the chicken pieces to the pot and fry for a few minutes until they are browned on all sides. Add the biryani masala powder, red chili powder, turmeric powder, ginger-garlic paste, and salt. Mix well. Add the yogurt and green chilies. Mix well and let it cook for 10-15 minutes until the chicken is fully cooked. Drain the soaked rice and add it to the pot. Add 4 cups of water, mix well and bring it to a boil. Reduce the heat to low, cover the pot with a tight-fitting lid and let it cook for 15-20 minutes until the rice is fully cooked and fluffy. Garnish with chopped cilantro and serve hot.
