Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 8-10 minutes. Remove chicken from skillet and set aside. Add eggplant to the same skillet and cook until lightly browned, about 5 minutes. Add onion, bell pepper, and garlic to the skillet and cook for another 2-3 minutes. Add chopped tomatoes to the skillet and stir well. Return chicken to the skillet and mix well with the vegetables.
