Classic Tomato Onion Potato Soup This hearty soup is perfect for chilly days and easy to make. The combination of tomatoes, onions and potatoes creates a delicious combination of flavors that everyone would enjoy.
Heat the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until the onions turn translucent. Add the potato cubes and sauté for 5 minutes more, stirring frequently. Add the chopped tomatoes, salt and pepper to the pot and cook for 3-4 minutes. Pour in the vegetable or chicken broth and stir to combine. Bring the soup to a boil then reduce the heat and simmer for 30-35 minutes until the potatoes are fully cooked.
