Start by washing the rice and cooking it in a pot with 2 cups of water for 18-20 minutes or until fully cooked. While the rice is cooking, cut the chicken into small pieces and season them well with salt and pepper. Heat 1 tbsp olive oil in a large pan over medium-high heat and add the chicken pieces. Cook them for about 5-6 minutes or until they are lightly browned. Reduce the heat to medium and add 4 oz cream cheese to the chicken.
