Fennel, Orange and Cashew Salad This fennel, orange and cashew salad is light and refreshing, perfect for a hot summer day. The combination of tangy oranges, fresh fennel, and crunchy cashew nuts make it a delicious and healthy dish that can be served as a side dish or a light entree.
Wash and trim the ends off a fennel bulb. Use a mandoline or a sharp knife to thinly slice the fennel and put it into a large mixing bowl. Peel and remove the white pith from 3 oranges. Cut the oranges into segments and add them to the mixing bowl with the fennel. In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and a pinch of salt and black pepper. Drizzle the dressing over the fennel and orange mixture and toss to coat evenly. Roughly chop ½ cup of cashew nuts and add them to the mixing bowl. Toss again to combine. Serve the salad immediately, garnished with some extra cashew nuts and chopped fennel fronds. Enjoy!
