Roasted Chicken and Potatoes
This recipe is perfect for a quick and easy comforting weeknight dinner.
Preheat the oven to 400°F (200°C).
Wash and scrub the potatoes properly. Cut them into wedges or cubes, depending on your preference.
Rinse and pat dry the chicken with paper towels.
Combine the potatoes, garlic, thyme, rosemary, salt, black pepper, and 2 tablespoons of olive oil in a bowl. Toss everything together to make sure the potatoes are evenly coated and seasoned.
Transfer the potatoes to a baking dish or sheet pan, leaving some space in between.
Rub the chicken with the remaining olive oil and season it with salt and black pepper generously.
Nestle the chicken into the potatoes, skin side up.
Bake for 40-45 minutes, or until the chicken is cooked through and the potatoes are crisp and golden brown.
Remove from the oven and let it rest for 5 minutes before serving. Enjoy your delicious Roasted Chicken and Potatoes!
