Gnocchi with Meatballs and Carrots This recipe combines pillowy gnocchi, savory meatballs, and carrots to create a delicious and satisfying meal. The gnocchi is boiled until tender, while the meatballs are cooked in a flavorful tomato sauce with carrots. This dish is perfect for a comforting weeknight dinner.
In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside. In a bowl, combine the ground meat with half of the chopped onion, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well and shape the mixture into small meatballs. Heat a large skillet over medium heat and add a drizzle of olive oil. Add the remaining chopped onion and diced carrots, cooking until they start to soften, about 5 minutes. Push the carrots and onion to one side of the skillet and add the meatballs to the other side. Cook the meatballs until browned on all sides, about 6-8 minutes. Pour the diced tomatoes and marinara sauce into the skillet with the meatballs, carrots, and onion. Stir gently to combine. Reduce the heat to low, cover the skillet, and cook for 15-20 minutes until the meatballs are cooked through and the flavors have melded together. Serve the gnocchi on a plate or in a bowl, spoon the meatballs, carrots, and tomato sauce over the top. Garnish with grated Parmesan cheese and fresh basil leaves. Enjoy!
