Haricots Verts Salad

This salad is a simple and flavorful way to showcase the delicate and delicious haricots verts.

1. Cook a pound of trimmed haricots verts in boiling water for 3-4 minutes, or until tender but still crisp. Drain and rinse under cold water.
2. Cut a pint of cherry tomatoes in half and thinly slice a quarter of a red onion.
3. In a bowl, whisk together 1/4 cup of olive oil and 2 tablespoons of lemon juice. Season with salt and pepper to taste.
4. Add the haricots verts, cherry tomatoes, and red onion to the bowl and toss gently to combine.
5. Crumble 4 ounces of feta cheese on top of the salad and serve. Enjoy!
