Mediterranean Chicken and Veggie Rice Bowl This delicious Mediterranean chicken and veggie rice bowl combines juicy chicken breast, tender eggplant, fresh tomatoes, and zucchini over a bed of fluffy rice. The garlic and olive oil add extra flavor and complexity to the dish.
Cook rice according to package instructions. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside on a plate. In the same skillet, add the remaining tablespoon of olive oil and the diced eggplant. Cook the eggplant until it is softened and lightly browned, about 8-10 minutes. Next, add the chopped zucchini and minced garlic. Cook until the zucchini is slightly tender, about 5 minutes. Finally, add the diced tomato, cooked chicken slices and salt and pepper to taste. Serve the chicken and veggie mixture over a bed of rice and enjoy!
