Oaxaca Cheese and Veggie Breakfast Sandwich Start your day off right with this delicious breakfast sandwich including fluffy eggs, tangy lime, and a mix of onion and carrot for a crunchy and fresh bite!
Peel and grate the carrot. Thinly slice the onion. Set aside. Crack 2-3 eggs into a mixing bowl. Whisk until frothy. Heat a skillet over medium heat, and pour the egg mixture into the skillet. Once the eggs are almost fully cooked, sprinkle the grated carrot and onion slices over the eggs. Fold the eggs in half to create a semi-circle shape. Cook for an additional 1-2 minutes. In a separate skillet, melt some Oaxaca cheese over medium heat. Place one slice of bread in the skillet to toast, being careful not to burn it. Once the bread is toasted, remove it from the skillet and place it on a plate. Squeeze fresh lime juice over the bread, then add the folded egg mixture on top of the bread.
