Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper. Once the skillet is hot, place the chicken thighs skin-side down and cook for about 5-6 minutes until the skin is crispy. Flip and cook for another 3-4 minutes on the other side. Remove the chicken from the skillet and set aside on a plate. Add the onion and garlic to the same skillet and saute for about 2-3 minutes, until the onion is translucent. Add the chopped potatoes and tomato sauce to the skillet and stir well. Place the chicken over the potatoes and cover the skillet with a lid. Cook for about 20-25 minutes or until the potatoes are tender and the chicken is cooked through. Serve hot and enjoy!
