Pan-Seared Salmon with Sautéed Rainbow Chard This recipe pairs the delicious flavors of pan-seared salmon with sautéed rainbow chard. The chard is cooked with garlic and a squeeze of lemon for brightness, making it the perfect complement to the rich and flavorful salmon.
Heat the olive oil in a non-stick pan over medium heat. Season the salmon fillets with salt and pepper on both sides, then place them skin side down in the pan. Cook for 4-5 minutes until the skin is crispy, then flip and cook for an additional 2-3 minutes until the salmon is cooked through. Remove the salmon from the pan and set aside. Add the minced garlic to the pan and cook for 1-2 minutes until fragrant. Add the chopped chard to the pan and toss to coat with the garlic oil. Cook for 3-4 minutes until the chard is wilted. Squeeze the juice of half a lemon over the chard and season with additional salt and pepper to taste. Serve the salmon fillets with the sautéed rainbow chard on the side. Enjoy!
