Ingredients
2 lbs of potatoes, peeled and cut into cubes
1 can of black beans, drained and rinsed
1 can of kidney beans, drained and rinsed
1 red onion, chopped
1/2 cup of fresh parsley, chopped
Potato and Bean Salad
This Potato and Bean Salad is a perfect side dish for any meal. It is healthy and very easy to make.
Boil the potatoes in salted water until they are tender, about 12-15 minutes.
Drain the potatoes and let them cool for a few minutes.
In a large bowl, mix together the potatoes, black beans, kidney beans, red onion, and parsley.
Drizzle some olive oil over the top and mix well.
Season with salt and pepper, to taste.
Serve chilled.
