Rinse the sabudana in cold water and soak them in 2 cups of hot water for 3-4 hours or until they puff up and are tender. Melt the butter in a pan and add cumin seeds. Stir until the cumin seeds start to splutter. Add turmeric powder, red chili powder, and salt. Mix well. Add the soaked sabudana and chopped peanuts. Mix everything well. Cook for 5-6 minutes or until sabudana pearls turn translucent and the peanuts are lightly toasted. Taste and adjust the seasoning if required. Add chopped coriander leaves and mix well.
