Saffron Beef Stew

This hearty stew is perfect for a cold day. Saffron threads give it a unique flavor and aroma that will leave your guests asking for the recipe.

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
2. Add the onion and garlic and sauté until softened, about 3 minutes.
3. Add the cumin, paprika, cinnamon, and saffron threads and stir to combine.
4. Pour in the beef broth and bring to a boil. Reduce heat to low and simmer, covered, for 1 hour.
5. Add the celery and carrot and continue cooking for another 30 minutes, or until the vegetables are tender.
