Shrimp and Broccoli Rice This recipe is easy to make and perfect for any seafood lover! Cooked shrimp, tender broccoli, and fluffy white rice are combined to create a savory and filling meal.
Rinse the rice in a fine mesh strainer and add it to a medium-sized saucepan along with the water. Bring it to a boil, then reduce the heat to low and cover the pot. Let simmer for about 18-20 minutes or until all the water has been absorbed and the rice is tender. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Add the shrimp and sauté for 3-4 minutes or until pink and cooked through. Add the broccoli florets to the skillet and cook for an additional 2-3 minutes until lightly tender.
