Soy-Bacon Chicken with Carrot Rice This recipe is a savory combination of flavors and textures. The juicy chicken is marinated in soy sauce and cooked with crispy bacon, creating a unique umami taste. The rice is cooked with diced carrots, which give it a slightly sweet and crunchy texture.
Rinse and drain 1 cup of rice. In a pot, add the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat and let simmer for 18-20 minutes or until fully cooked. Peel and dice 3 carrots into small pieces. Add the diced carrots to the pot with the rice halfway through cook time. Cook 4 slices of bacon in a skillet over medium heat until crispy. Remove bacon slices and chop into small pieces. Cut 4 chicken breasts into thin strips. In the same skillet, add the chicken strips and cook for 5-7 minutes or until fully cooked through. Pour 3 tablespoons of soy sauce over the chicken strips and stir until well combined. Serve the chicken on top of the carrot rice and sprinkle with the bacon pieces. Enjoy!
