Tofu and Green Beans Stir Fry
This stir-fry is not only delicious but it's also very healthy and easy to make.
Begin by pressing the tofu to remove excess water. To do this, wrap the block of tofu in a couple of paper towels and place a heavy object on top of it for at least 20 minutes.
Cut the tofu into small cubes and season with some salt and pepper.
Heat a tablespoon of oil in a wok or large skillet over medium-high heat. Once the oil is hot, add the tofu cubes and stir-fry until browned on all sides, about 5-7 minutes. Remove from the wok and set aside.
In the same wok, add the string beans and stir-fry for a few minutes until they start to become tender.
Add the tomatoes and continue cooking until they have started to break down, creating a sauce.
Add the fried tofu cubes to the wok with the vegetables and mix well.
Continue stir-frying for a few minutes until everything is heated through and the sauce has thickened.
