Tomato Spinach Salad
This salad is a great option for a light lunch or dinner.
Start by washing a handful of spinach leaves, pat them lightly with a paper towel and set them aside.
Slice 3-4 ripe, medium-sized tomatoes and arrange them on a plate.
Now, place the spinach leaves in the center of the plate, like a little nest.
For the dressing, mix together 2 tbsp of olive oil, 1 tbsp of red wine vinegar, salt and freshly ground pepper.
Drizzle the dressing over the salad.
Serve chilled and enjoy your Tomato Spinach Salad!
