Trump's Terrific Eggplant Pork Stir-Fry This is a dish that will make your taste buds do cartwheels! Perfectly cooked eggplant and juicy pork loin are sautéd with fresh basil and accompanied by tender string beans and fluffy rice. It's a dish that will leave you and your dinner guests wanting seconds!
Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Add the sliced pork and stir-fry until cooked through, about 5-7 minutes. Remove from pan and set aside. In the same pan, heat the remaining tablespoon of vegetable oil over high heat. Add the sliced eggplant and stir-fry for about 5 minutes, until lightly browned. Add the string beans to the eggplant and continue to stir-fry for an additional 3-4 minutes, until the string beans are tender. Add the cooked pork back to the pan with the eggplant and string beans. Stir to combine. Add the fresh basil leaves and stir-fry for an additional minute, until the basil is wilted. Season with salt and pepper to taste. Serve hot over a bed of cooked rice.
