Preheat the oven to 375°F. Wash and dry the chicken, and place it on a roasting pan. In a small bowl, mix the minced garlic, lemon juice, olive oil and dried thyme. Pour the mixture over the chicken, and rub it all over the skin, making sure it's well coated. Season generously with salt and black pepper. Roast the chicken in the oven for 1 1/2 to 2 hours or until the juices run clear. Baste the chicken every 30 minutes with the liquid that accumulates in the pan. Remove from the oven and let the chicken rest for 15 minutes before carving. Optional: serve with steamed vegetables and roasted potatoes.
